Making a Rolex at home is very easy, here’s the recipe
A Ugandan Rolex is a popular street food in Uganda, consisting of a rolled chapati filled with eggs and vegetables. Despite the name, it has nothing to do with the watch brand! Here’s how to make a delicious Ugandan Rolex at home:
Ingredients:
For the Chapati:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- Oil for frying.
- Water (as needed to form a dough)
For the Filling:
- 3-4 eggs
- 1/2 onion, finely chopped
- 1 small tomato, diced
- Salt
- Oil for frying
Instructions
Make the Chapati
- In a mixing bowl, combine the all-purpose flour and salt.
- Gradually add water and knead to form a soft, pliable dough.
- After resting, divide the dough into small balls (twice the size of a golf ball).
- Roll each ball into a thin circleon a lightly floured surface.
- Heat a non-stick pan over medium heat. Cook each chapati on each side until golden brown. You should add oil as you flip the chapati, to keep it soft enough to use it for a Rolex.
Prepare the filling
- In a bowl, beat the eggs and season with salt.
- Heat a small amount of oil in a frying pan over medium heat.
- Pour in the beaten eggs until the eggs are fully cooked.
Finalise the Rolex
- Place a chapati on a plate. Spoon a portion of the egg and cut vegetables onto one edge of the chapati.
- Roll the chapati tightly around the filling, starting from the edge with the egg and vegetables.
- You can optionally slice the Rolex in half for easier eating.
