This Ugandan Inspired Cucumber & Carrot salad I tried in Uganda for the first time, is now my go to salad in Denmark
This salad is amazing…
I first tasted it at Let’s Do Coffee in Munyonyo, Kampala, and I loved it so much that I asked my wife to show me how to make it – She’s Ugandan if you’re wondering. I was really surprised by how easy it is to prepare. The main ingredients are cucumbers and carrots, which you cut into thin strips using a Julienne Iron, and then you just add some Balsamico vinegar and oil on top.
What is a Julienne Iron ?
A julienne iron, which is also called a julienne peeler or slicer, is a handy kitchen gadget that helps you cut fruits and vegetables into long, thin strips that look like matchsticks. This cutting style is called “julienning.” Usually, a julienne iron has a sharp blade and a handle, making it easy to slide the tool over the food. Some models even have different blade options so you can make strips of various thicknesses. It’s a favorite tool for getting veggies ready for salads, stir-fries, or as decorations, since the thin strips cook evenly and look great on a plate.
Ingredients
- 1 Cucumber
- 2 Carrots
Ingredients for Salad Dressing
- 1 tbsp Balsamico Vinegar
- 1 tbsp Oil
- 1/2 tsp Sugar
- 1/3 tsp Salt
Instructions
- Peel the carrot, and then use a julienne iron to cut the cucumber and carrot.
- Mix all the ingredients for the dressing together and shake it well.
- Add the dressing to the salad.
- Let it rest in the fridge for 30 minutes before serving.
